Savory Breakfast Bread Souffle

Ingredients:

15 thin slices of bread

8 oz bacon, cut in pieces

5 green onions, chopped

6 large eggs

4 cups half & half, or milk

4 oz sharp cheddar cheese

salt and pepper


Instructions:

1. Saute bacon until crisp and drain.

2. In a large bowl, beat together eggs and half & half, or milk. Season with salt and pepper.

3. Arrange bread in a buttered 8x12 glass baking dish. Sprinkle with cheddar, bacon and onions. Pour egg mixture over ingredients press bread into custard mix. Let set, refridgerated at least 2 hours or overnight.

4. Bake at 350 approximately 50 minutes until golden brown and puffed (like a souffle). Test by shaking pan gently. Souffle should move in one piece. Serve immediately.

This recipe is easily doubled to feed larger groups.
