Tuna and Cannellini Bean Salad
Ingredients:
2 cans cannellini beans, rinsed and drained
1 cup italian parsley, chopped
1 cup red onion, diced
½ cup basil, chopped
2 cans tuna in oil, *reserve oil
simple vinaigrette of choice
Instructions:
1. Toss all ingredients together in a large bowl.
2. Refrigerate overnight.
3. Serve over salad greens if desired.
* Add a small amount of oil from tuna to your vinaigrette for a more flavorful mix!
