Asparagus:

The asparagus plant is low in calories and contains no fat or cholesterol and is a good source of potassium, deitary fiber and folic acid. It has been know to have many health benefits, and may be one of the oldest cultivated vegetables in existence. There is a recipe which calls for asparagus in one of the oldest surviving cookbooks, Apicius’s third century AD "De re coquinaria, Book III" translated to "On the subject of Cooking.
Asparagus with Lemon Sauce
Ingredients:
½ cup chicken stock
2 tablespoons lemon juice
1 teaspoon peeled, grated fresh ginger
salt and pepper to taste
8 asparagus spears
Instructions:
1. Bring broth, lemon juice and ginger to a boil in a small pan. Reduce heat and simmer until reduced to ¼ cup. Strain, add salt and pepper.
2. Steam asparagus until tender, about 6 minutes.
3. Place asparagus on a plate, drizzle with sauce.
