Minestrone

Ingredients:

1 medium onion, diced

1 tablespoon garlic, minced

28 oz (canned) diced tomatoes, undrained

32 oz vegetable or chicken broth

1- 15 oz can cannellini or garbanzo beans

1- 15 oz can kidney beans

2 cups swiss chard, chopped

½ cup vermicelli, broken

¼ cup pesto

½ cup parmesan


Instructions:

1. In large pot, saute onion & garlic until soft.

2. Add tomatoes, broth, beans & bring to a simmer.

3. Add swiss chard & vermicelli & cook until pasta is done.

4. Pesto may be stirred in at this point or at service with parmesan.

This recipe may be made in advance and reheated. Garlic bread is a MUST!
