Wild Mushroom Soup with Madeira

Ingredients

Serves 6

½ cup madeira

2 ¾ cups chicken broth

1 oz dried morel mushrooms

1 onion, diced

4 tablespoons unsalted butter

3 tablespoons flour

2 ¼ cups beef broth

1 lb button mushrooms

Salt and pepper to taste


Instructions

1. In a small sauce pan, combine madeira, ½ cup chicken stock and dried morels and bring to a boil. Remove from heat and steep for 30 minutes.

2. In a large pot, melt butter and cook onion until wilted. Sprinkle with flour and stir. Let cook for 5 minutes.

3. Add remaining ingredients including morel steeping liquid and simmer for 30 minutes.

4. Puree soup in batches in blender. Reheat, garnish with chives and creme fraiche.
