Pork Tenderloin with Apples & Cider
Ingredients:
2 cloves garlic, chopped
½ cup onion, chopped
3 tablespoons olive oil
16 oz granny smith apples, peeled, cored and sliced
3/4 cup cider, apple juice or Calvados brandy
Instructions:
1. Preheat the oven to 350 degrees.
2. In heavy skillet, saute the garlic and onion until tender.
3. Add pork tenderloin and brown. Remove and place in baking dish.
4. Add apples to skillet and lightly brown.
5. Deglaze pan with cider/calvados and pour over the meat.
6. Bake about 40 minutes.
