Parsley:
Parsley is grown in two varieties, curly and Italian, or Flat Leaf; with the Italian variety having a stronger aroma and less bitter taste. Parsley is considered one of the world's most popular herbs due to it's adaptability and bright, vibrant color. This herb is highly nutritious and is said to posses many healing properties including protection from rheumatoid arthritis. It is an excellent source of vitamin K, vitamin C and A as well as being a good source of folic acid.
Wild Rice Soup
Ingredients:
2 cups cooked wild rice
3 cups chicken, cooked and shredded
2 boxes chicken broth or stock
2 ribs celery, diced
2 onions, diced
3 cloves garlic, minced
ΒΌ cup parsley, chopped
2 carrots, diced
Instructions:
1. Saute celery, onions, garlic and carrots in olive oil.
2. Add chicken broth and chicken, simmer for 30 minutes.
3. Add wild rice, simmer for 15 minutes.
4. Adjust seasoning and stir in parsley.
