Wild Rice Soup

Ingredients:

2 cups cooked wild rice

3 cups chicken, cooked and shredded

2 boxes chicken broth or stock

2 ribs celery, diced

2 onions, diced

3 cloves garlic, minced

ΒΌ cup parsley, chopped

2 carrots, diced


Instructions:

1. Saute celery, onions, garlic and carrots in olive oil.

2. Add chicken broth and chicken, simmer for 30 minutes.

3. Add wild rice, simmer for 15 minutes.

4. Adjust seasoning and stir in parsley.
