Salmon Salad with New Potatoes

Ingredients:

1 ½ lbs new potatoes, cooked and halved

½ lb green beans, cooked

½ cup red onion, finely diced

1 ½ lbs salmon, poached or grilled

½ cup italian parsley, finely chopped

vinaigrette of choice


Instructions

1. Combine vegetables and parsley in bowl and toss with vinaigrette.

2. Cut salmon into bite sized pieces and gently toss with vinaigrette.

3. On a serving plate, place a bed of vegetables and top with salmon.
