Smoked Salmon Soup
Ingredients:
6 tablespoons unsalted butter
1 ½ cups finely chopped onion
¾ cup chopped fresh dill
2 medium tomatoes, seeded & chopped
8 oz smoked salmon, finely chopped
2 tablespoons flour
8 cups water
2 cups fresh spinach, finely chopped
2 - 8 oz packages, cream cheese
2 tablespoons lemon juice
Instructions:
1. Melt butter in medium-sized saucepan over medium heat. Add onion & saute until soft. Stir in dill, tomatoes & smoked salmon.
2. Cook 3 minutes. Add flour and cook one minute. Gradually stir in water. Bring to a boil, reduce heat & simmer uncovered over medium low heat 20 minutes.
3. Season with pepper to taste. Stir in spinach, simmer 5 more minutes.
4. Stir in cream cheese 1oz. at a time over low heat, allowing each piece to melt. When melted and smooth, stir in lemon juice. Garnish w/chopped chives or sprigs of dill.
