Sicilian Fish
Ingredients:
1 lb. firm white fish (halibut, cod, snapper)
1 onion, sliced
1 clove garlic, minced
2 (14.5 oz.) cans diced tomatoes
1 tablespoon capers, rinsed & drained
ΒΌ cup kalamata olives, pitted & chopped
1 tablespoon fresh lemon juice
1 teaspoon dried oregano
salt and pepper to taste
Instructions:
1. Preheat oven to 450 degrees.
2. Place fish in 8 inch baking pan.
3. Saute ingredients in skillet and simmer for 6 minutes.
4. Spoon over fish.
5. Bake for 10 minutes or until fish is opaque.
