Chicken Tortilla Soup
Ingredients:
1lb cooked chicken, chopped
1 can or 2 cups fresh corn, drained
2 cans or one box chicken stock
1 can black beans, drained and rinsed
2 cups salsa (preferably chunky)
1 cup tortilla chips
Shredded cheddar cheese
1. Combine ingredients, except cheese in a large sauce pan.
2. Simmer over medium heat until tortilla chips fall apart, about 20 minutes.
3. Place more tortilla chips in a bowl & top with soup & cheddar cheese.
* Garnish suggestions: sour cream, chopped fresh cilantro or squeeze of fresh lime juice.
