Zucchini & Rice Casserole
Ingredients:
8 cups sliced zucchini
1 cup chopped onion
¼ cup chicken or vegetable broth
2 cups cooked rice
1 cup (4 oz) shredded cheddar cheese
1 cup sour cream
¼ cup grated parmesan, divided
¼ cup breadcrumbs
salt and pepper to taste
2 eggs lightly beaten
Instructions:
1. Preheat the oven to 350 degrees. Combine the first three ingredients and simmer 20 minutes until tender.
2. Drain. Combine mixture with the rest of the ingredients in a bowl and stir.
3. Spoon mixture into a 13x9 inch baking dish. Sprinkle with additional parmesan.
4. Bake for 30 minutes or until bubbly.
