Grilled Bread Salad

Ingredients for Salad

1/4 Cup unsalted butter, room temp

1/4 Cup olive oil

2 -3 garlic cloves, minced 1

loaf day old Italian-style bread

6 - 8 tomatoes cut into sections

1/4 cup sliced red onion

1 ball fresh mozzarella torn into bite size pieces

Ingredients for Dressing

1/3 cup extra-virgin olive oil

1/2 tsp dry oregano

1 tsp red wine vinegar

2 tbsp balsamic vinegar

3 tbsp chopped fresh basil

1/2 tsp sea salt

Fresh ground black pepper, to taste


1. In a bowl combine butter, 1/4 cup olive oil and garlic. Cut bread into 3/4 inch slices and brush each side lightly with the mix.

2. Oil the grill racks and preheat your grill to high. Grill bread until well marked and toasty, about 1-2 minutes each side. Keep a careful eye out during this step, bread can go from charred to scorched pretty fast.

4. Remove bread and allow to cool slightly. Cut into cubes, and place in a large bowl with onion, cheese and tomatoes. In another bowl combine remaining oil, vinegars, salt and pepper, oregano and basil. Whisk until well combined, you may need to add a touch extra oil in order to cover the salad well.

5. Add wet mix to the bread bowl tomatoes, and toss until coated. Makes an excellent side dish for grilled meats or seafood.
