Salmon with Blueberry Salsa

    Ingredients:

  • 4 Salmon Fillets (6 oz)

  • 1/2 Lg Pink Grapefruit, peeled and diced

  • 2 Tbsp Red Onion, finely diced

  • 1 Jalapeno, seeded and diced

  • 1/2 Tsp Cumin

  • 1 Tsp Honey

  • 1 Tbsp Fresh Lime Juice

  • 1/2 cup frozen blueberries, thawed

  • 1 Cup Fresh Blueberries

  • 1/2 Bunch Cilantro, chopped

  • Salt and Pepper to taste

  • 1/2 Tsp Garlic Powder

Instructions:

  • Prepare grill and oil the grate, or preheat broiler. Salt and pepper salmon to taste and sprinkle with garlic powder.

  • Grill or broil salmon for 6 to 8 minutes or until cooked through.

  • While salmon is cooking mix together all remaining ingredients for the salsa. Serve on top of fish or on the side.
