4 Salmon Fillets (6 oz)
1/2 Lg Pink Grapefruit, peeled and diced
2 Tbsp Red Onion, finely diced
1 Jalapeno, seeded and diced
1/2 Tsp Cumin
1 Tsp Honey
1 Tbsp Fresh Lime Juice
1/2 cup frozen blueberries, thawed
1 Cup Fresh Blueberries
1/2 Bunch Cilantro, chopped
Salt and Pepper to taste
1/2 Tsp Garlic Powder
Prepare grill and oil the grate, or preheat broiler. Salt and pepper salmon to taste and sprinkle with garlic powder.
Grill or broil salmon for 6 to 8 minutes or until cooked through.
While salmon is cooking mix together all remaining ingredients for the salsa. Serve on top of fish or on the side.
