Lemon Thyme Salmon

    Ingredients:

  • 4 - 5 ounce halibut fillets

  • Juice of 1 lemon and half its zest

  • Juice of ½ an orange

  • Sprigs of thyme

  • 1 garlic clove, minced

Instructions:

  • Place fish fillets skin side down in a glass dish. Add lemon, lemon zest and orange juice, thyme and garlic. Cover with plastic wrap and refrigerate for 20 minutes. Preheat the broiler.

  • Broil marinated halibut 2 to 3 inches from heat for 8 to 10 minutes, depending on thickness of fillets. Serve and enjoy with fresh, steamed asparagus.
