Lobster Roll

    Ingredients:

  • 1/2 cup mayonnaise

  • 1/2 cup mayonnaise

  • 1-1/2 tsp Dijon mustard

  • 1 tsp olive oil

  • 3/4 tsp chopped fresh tarragon or chives

  • A few dashes hot-pepper sauce

  • 1/4 tsp salt

  • 1/8 teaspoon black pepper

  • 2 Cups cooked Lobster, about 2 whole

  • 4 soft frankfurter rolls grilled

  • 4 large pieces green bibb lettuce

  • Sliced red onions, optional

Instructions:

  • Dressing: In a medium-size bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, olive oil, tarragon or chives, hot-pepper sauce, salt and pepper until well blended.

  • Lobster: Using a rubber spatula, gently fold lobster into dressing until evenly coated. Cover bowl with plastic wrap; refrigerate for at least 1 hour to develop flavors, or up to 6 hours.

  • Gently open each frankfurter roll; lightly toast. Fill each roll with lettuce, lobster mixture and top with onions if desired.
