Halibut with Mango Salsa

    Ingredients:

  • 1 Mango, diced

  • 1/2 Large Red Bell Pepper, diced

  • 1/4 Cup Red Onion, diced

  • 3 Tbsp Cilantro, finely chopped

  • 2 Tbsp Fresh Lime Juice

  • 2 Tbsp Extra-Virgin Olive Oil

  • 1 Tsp Ground Cumin

  • 1/2 Tsp Green Tabasco Sauce

  • 4 (6 oz) Halibut Fillets

  • Salt and Pepper, to taste

  • 1 Tbsp Vegetable Oil

Instructions:

  • Combine mango, red pepper, and red onion in a bowl. In a separate bowl, combine lime juice, olive oil, cumin, and green Tabasco. Add mango and cilantro then combine all ingredients and set aside.

  • Season Halibut fillets with salt and pepper. In a large nonstick skillet heat oil over medium-high heat.

  • Sear the fillets for 4 to 6 minutes per side, depending on the thickness.

  • Remove fish from the pan to individual plates, serve topped with mango salsa.
