1 Mango, diced
1/2 Large Red Bell Pepper, diced
1/4 Cup Red Onion, diced
3 Tbsp Cilantro, finely chopped
2 Tbsp Fresh Lime Juice
2 Tbsp Extra-Virgin Olive Oil
1 Tsp Ground Cumin
1/2 Tsp Green Tabasco Sauce
4 (6 oz) Halibut Fillets
Salt and Pepper, to taste
1 Tbsp Vegetable Oil
Combine mango, red pepper, and red onion in a bowl. In a separate bowl, combine lime juice, olive oil, cumin, and green Tabasco. Add mango and cilantro then combine all ingredients and set aside.
Season Halibut fillets with salt and pepper. In a large nonstick skillet heat oil over medium-high heat.
Sear the fillets for 4 to 6 minutes per side, depending on the thickness.
Remove fish from the pan to individual plates, serve topped with mango salsa.
