4 qty 6-8oz Halibut Fillets
1/4 Cup Italian Parsley, Chopped
1 Tbsp Lemon Thyme, Chopped
1 1/2 Cups Panko Breadcrumbs
2 Cloves Garlic, Minced
Zest of 1 Large Lemon
Salt & Pepper to Taste
Drizzle of Olive Oil
Preheat oven to 400° F.
In a pie plate combine all ingredients except halibut fillets. Season halibut lightly with salt and pepper.
Dip each halibut fillet into the breadcrumb mixture until evenly coated on all sides (remove the skin ahead of time if preferred) and place in a large, lightly oiled baking dish.
Sprinkle any remaining breadcrumbs on top of each fillet and drizzle with olive oil.
Bake fillets for 15 - 20 minutes until firm to the touch and opaque.
