Panko Crusted Halibut

    Ingredients:

  • 4 qty 6-8oz Halibut Fillets

  • 1/4 Cup Italian Parsley, Chopped

  • 1 Tbsp Lemon Thyme, Chopped

  • 1 1/2 Cups Panko Breadcrumbs

  • 2 Cloves Garlic, Minced

  • Zest of 1 Large Lemon

  • Salt & Pepper to Taste

  • Drizzle of Olive Oil

Instructions:

  • Preheat oven to 400° F.

  • In a pie plate combine all ingredients except halibut fillets. Season halibut lightly with salt and pepper.

  • Dip each halibut fillet into the breadcrumb mixture until evenly coated on all sides (remove the skin ahead of time if preferred) and place in a large, lightly oiled baking dish.

  • Sprinkle any remaining breadcrumbs on top of each fillet and drizzle with olive oil.

  • Bake fillets for 15 - 20 minutes until firm to the touch and opaque.
