Sesame Salmon with Avocados

    Ingredients:

  • 1 1/2 lbs Salmon

  • 1 Large Avocado

  • Dark Sesame Oil

  • Soy Sauce

  • 1 Tsp Ginger, grated

  • 1 Tsp Lemon Juice

  • 2 Tsp Toasted Sesame Seeds

Instructions:

  • Cut fish into bite size chunks. In a medium skillet heat sesame oil over medium high heat. Cook salmon turning occasionally for about 6 minutes.

  • While salmon is cooking dice the avocado into bite sized pieces. Cover avocado with lemon juice to prevent browning.

  • In a medium bowl, whisk 1/8 Cup Soy sauce with 2 1/2 tbsp sesame oil. Add ginger, avocado and sesame seeds to mix and toss.

  • Serve salmon topped with sauce or on the side.
