Sicilian Baked Fish

    Ingredients:

  • 1lb Firm White Fish (Halibut works well)

  • 1 Onion, sliced

  • 1 Clove Garlic, minced

  • 2 Cans (14.5 oz) diced tomatoes

  • 1 Tbsp Capers, rinsed and drained

  • 1/4 Cup Pitted Kalamata Olives

  • 1 Tbsp Fresh Lemon Juice

  • 1 Tsp Dry Basil

  • 1 Tsp Dry Oregano

  • Salt & Pepper to taste

Instructions:

  • Preheat oven to 450 degrees.

  • Place fish in 8 inch baking pan.

  • Saute remaining ingredients in skillet and simmer for about 6 minutes, until slightly thickened and spoon over fish.

  • Bake for about 10 minutes, or until fish is opaque.
