1lb Firm White Fish (Halibut works well)
1 Onion, sliced
1 Clove Garlic, minced
2 Cans (14.5 oz) diced tomatoes
1 Tbsp Capers, rinsed and drained
1/4 Cup Pitted Kalamata Olives
1 Tbsp Fresh Lemon Juice
1 Tsp Dry Basil
1 Tsp Dry Oregano
Salt & Pepper to taste
Preheat oven to 450 degrees.
Place fish in 8 inch baking pan.
Saute remaining ingredients in skillet and simmer for about 6 minutes, until slightly thickened and spoon over fish.
