Tortilla Soup

    Ingredients:

  • 1 lb Cooked Chicken, chopped

  • 1 Can or 2 Cups Fresh Corn, Drained

  • 2 Cans or 1 Box Chicken Stock

  • 1 Can Black Beans, drained and rinsed

  • 2 Cups Salsa (preferably chunky)

  • 1 Cup Tortilla Chips

  • Shredded Cheddar Cheese

Instructions:

  • Combine ingredients, except cheese and corn in a large sauce pan.

  • Simmer over medium heat until tortilla chips fall apart, about 20 minutes.

  • Place more tortilla chips in a bowl and top with soup and cheddar cheese.

  • Add corn and heat through being careful not to boil. Add salt and pepper to taste.
